I,m living in both ,Spain and,Portugal and have lots of years in southern Spain and have found that the Frontier of the two country's area is far the best in these changing times .

Airbnb will be a great short-term option to get a feel for different towns. Be sure to book something with a host nearby who can provide local tips. You can rent a car. Things like Nerja, Torrox & Frigiliana were nice smaller coastal towns with charm when I visited. Personally I preferred being a bit inland from the busier resorts.
