Hello Farouq,
Welcome to Istanbul.
My Friend, now days Turkey recievesa lot of Arabic Tourist from Arabic countries and most of restaurants, shops look for arabic speaking waiters, sales persons because it becomes mandotary for them to have at least one sales person who speak arabic in order to make easy communication with Arab tourists..
I would suggest you to walk around Grand Bazaar, Eyptian Bazaar or at any touristic places and knock the each door :(
