Going to be spending a month in Beijing this Feb and April and moving in June. Looking for someone to teach me sanxian and people to kayak, hike and bike with. Have my own bike and kayak there now. My wife works weekdays and I will be slumming...

Regarding the sanxian try contacting CNethnic.

Kayak - do not know.

Hiking - how serious? If you want to exert yourself then try Beijing Hikers, if something more relaxed then I organise monthly "Escape Concrete Beijing" trips during the warmer months.

Cycling - then maybe Mountain bikers of Beijing (MOB) is suitable
