Can I get a tour of Cuenca and surrounding area?

I'm Claudia, and arriving in Quito for a conference on June 20th.  The conference is the 22nd thru the 24th.  I arrive in Cuenca on the 25th through the 29th.  I have nothing to do in Cuenca, and I need to find a tour of the town, including the sites, the food, and maybe the outskirts.  Does anyone know of a tour company?

There's lots of gringos in Cuenca who might be willing to show you around, but I'd try with a local instead.  You can get a tour with locals who sort of freelance, registered with this website below.   The guides are not with a company per se but are individuals willing to show you around, some for free, some for a few bucks/hour, many speak English:

I don't have any experience with them, but they are an established company and are conveniently located in El Centro.
