Profile:
Nationality - Malaysian
Age - 25 to 30
Current pass: Employment pass
Salary: $2500 to $3000
Occupation: Audit

EP renewal timeline:
10/11/20 - Renew with $3000 salary
19/11/20 - Rejected due to new salary requirement not met
20/11/20 - Appeal without salary increase but justified with reasons including why co. need me and what skill set I possess which is hardly found in locals

My company doesn't have S pass quota and not realistic to request for salary higher than $3000. I know this is way below the new requirement but wanted to know if there is still hope for my appeal based on situation stated above.

There is no hope - why should MoM break its own rules for you?
You better look for another employer, who values you more and pays a salary within market levels.
