Recipe: Chicken salmi

This spicy chicken stew with a twist is a must try if you want to know what Mauritian cuisine is all about. The chicken salmi is fairly easy to prepare and will be a revelation to your taste buds. The dish can be served with a small side salad. Here's the recipe.

Ingredients

  • 8 pieces of chicken 
  • 1 onion
  • 1 clove of garlic
  • 1 piece of ginger
  • Curry tree leaves
  • 1 pinch of salt
  • Oil
  • Red wine

Marinade

  • 2 small peppers
  • 4 tomatoes
  • 1 clove
  • pepper
  • Cinnamon 
  • Coriander leaves
  • 1 onion

Preparation

Wash the chillies and tomatoes and cut them into 4 chunks.

Peel the onion, cut it into big chunks.

Add the other ingredients of the marinade to your food processor and blend.

Pour the mixture over the chicken pieces.

Add the pressed garlic, the peeled and grated ginger and a pinch of salt.

Marinate for about 15 minutes.

Pour the oil into a frying pan. Sauté the onions for about 3 minutes.

Add the curry tree leaves, the chicken and some of the marinade. Let it simmer for 5 minutes.

Add the red wine.

Add 150 ml of water in which you mix the rest of the marinade.

Simmer for 25 minutes.
