Recipe for napolitains in honor of the 56th year of independence of Mauritius

To mark Mauritius' 56th year of independence, what better way than indulging in a batch of napolitaines adorned in the nation's vibrant colors?

An iconic Mauritian pastry, the napolitain comprises two buttery shortbread cookies sandwiched with jam and topped with a delicate white or soft pastel pink icing. Widely adored, it graces occasions ranging from lavish receptions to cozy family tea gatherings.

Here's what you'll need to make a dozen medium-sized Neapolitans:

  • 250g flour
  • 175g softened butter
  • A splash of milk or water
  • Guava, raspberry, or strawberry jam
  • 200g powdered sugar
  • Red, blue, yellow, and green food coloring!

Here's how to whip them up:

1. Preheat your oven to 180°C before diving into the cookie prep.

2. Combine butter, salt, and flour in a bowl, working it with your fingers into a smooth dough ball. Chill in the fridge for half an hour, then roll out to about 1cm thickness. Cut out several small circles using a cookie cutter or glass, and arrange them on a baking sheet lined with parchment paper. Bake for roughly 20 minutes until they're just set (avoid letting them turn golden). Let them cool.

3. Meanwhile, on low heat in a saucepan, mix powdered sugar with milk or water until it thickens. Divide the mixture into four bowls, adding food coloring to each bowl to achieve your desired hues.

4. Once the cookies are cooled, assemble your napolitans by sandwiching two cookies together with jam and then generously coating them with icing. Give them a rest in the fridge, then savor the fruity and colorful delights!
