I cant honestly see how a phone can contain optics anywhere near good enough to resolve a 41mp image

The mega-pixel is not the only measure to look at a camera. In fact only one of the several parameters. The next immediate thing after MPs is the image sensor size. This is main difference between mobile, compact and the mind-blowing DSLR cameras (the 3 main cam categories).

If the Image sensor is small, a big MP exposure (means a huge number of pixels or resolution) can't do any good. The target area must be better as well; so as to digest those pixels.

Example: IPhone4S has (first time introduced) a backside-illuminated (BSI) CMOS sensor with a sensitivity better than of a iPhone4. Then a 3MP+ resolution increase really matters and causes a visible difference.

Only MPs doesn't & can't do any good.

Another parameters to set eys at is the image stability. i.e. How good a camera acts while being non-stationery.
