We are considering a move to Umbria - particularly the Assisi area - can someone give me websites to rent long term houses - 3 bedrooms, garden etc?

Hello! I moved to Spello 2 months ago, and from living here and talking to expats, I would suggest just getting a vacation rental for a couple of months (rates can be low for extended stays, particularly in the low season). Once here, you'll be much more able to find a place. It seems everyone I know (including me, but I was lucky to find it through word of mouth before I landed) got their apartments from talking to people.
