traveling to Europe

I am planning a trip to Portugal next year. While I was looking into the best way to travel throughout Portugal, I began looking into traveling by train. I than found out what a great rail system Europe has!
Because of this, my interest in traveling boadened to include visiting other countries besides Portugal and Spain. I have never been to Europe, so I am really excited about the idea of seeing as much of Europe as I can.
I would love to include Italy, France Germany and Crotia, but I need to be realistic and be able to spend time in each country to get a good feel about what each country is about.
I can see a trip for 6 to 8 weeks. Along with Portugal and Spain, how many other countries do you think I could travel to in that time period without feeling rushed?

Get an InterRail/EURail ticket.
Taking overnight trains for longer (inter-country) distances saves time and accomodation cost.
