Hi there I really need some advice....
I am from the UK and my partner is in SA (he is a SA citizen) I would like to join him in SA. I have spoken to the embassy and they have suggested going to SA on the 90 day tourist visa then apply for a relative permit. I am a bit worried though as i have heard this can take along time in SA! I also just wanted to check what documentation i need as we have never lived together before but would once there what counts as proof of co-habitation? He gets accommodation as part of his salary so we wouldn't have proof of rent?? 
Any help or information about the process would be much appreciated!

Proof of cohabitation is anything that shows both of you live together. Utility bills in both of your names, rental agreements, even parents signing a letter stating that both of you live at their home.

Hi.

You should apply from the UK, the process here is really slow, contact the embassy and they will send you the forms you need and a list of required documentation.

To get the Life Partner Permit LPP you must be co-habitants, I think you are going to find it very difficult to be granted the LPP if you have not been co-habitants.

When I applied for my LPP We used official letters received at the same address to prove co-habitation.

If you have not lived together the only way I see is coming here and living together so you can have documentation of co-habitation.

You must also take into account what you plan to do while in S.A. are you going to study, work or do business??? Maybe you should consider applying for a work/study/business visa instead of a LPP.

SarahK is mostly right. Decide what you want to do first. Then, you can get the right permit. A Life Partner Permit doesn't allow you to work/study/run a business, but you can get an endorsement easily which does allow you to do these things.
