There is nothing wrong with going to Oman on a visitor's visa to attend an interview and evaluate your prospective employer.
If you are thinking of taking up an employment there , and your Omani employer allows you to work, both him and you will be risking prosecution since you will be breaking the law, you will still be required to go to your home country to get the new work visa stamped after your 3 months visit visa expires.
I suggest you should feel morally and legally obliged to close your present employment amicably, give the required notice, do the end of employment settlement and apply for exit only visa.
You never know in two years time you will be offered a job in Saudi and you will not be able to take it since you will be black listed.
