I'm not cook but I do have a list of favorites, The recipes are results from Google searches.

Then there are gorditas, tamales, sopes and an infinite number of permutations of tacos, enchiladas and burritos.

I love Mexican food. I also really like street vendor food. Give me a taco stand and I am a happy guy.

We live in Alamos Sonora- street food here is OK-- except the freshly made pork chicharrones and carnitas we buy at the Tianguis every Sunday- they are super delicious and eat them with hot corn tortillas and fresh  salsa de tomato, cebollita blanca picada, cilantro and chiles serranos.

Sounds yummy!  Cochinita pibil is so good. I love it and cook it sometimes- as far as green habanero chiles, you cannot find those in Sonora.

Well Priscilla...I lived in Oaxaca for 2 years and the state is renowned for its molé.
Mole is an ancient Indigenous cocoa bean derivative ground into a powder and mixed with animal fat plus oth ingredients to form a paste. It looks like chocolate but not the same flavour. You can cook it with any meat but most popular is with chicken. It's amazing...molé Poblano. Oaxaca is famous for it and they make 7 different kinds of molé. One must be careful eating it because it is very heavy on the untrained stomach. The best states for food in Mexico are Oaxaca and Puebla.  By and large, Mexican food can't hold a candle next to Jamaican or Indian food in terms of diversity, flavour or cooking process but there are some interesting dishes. Provecho!
