I was wondering if there are any expats on this forum who are now doing what I plan to do. I would like some advice on how to get set up with Pokerstars and whatnot.

That seems like a crazy reason to move to another country, but to each their own. I don't know anything about online poker, but couldn't you just use a VPN?

VPN;s are against their TOS so if the VPN goes down and they see me playing from the US they can take all my money in my account

Note that internet here is not totally reliable and the speed is usually much slower than in North America. When the rain is heavy, connection may be lost and if sound is important you may have to sit in a closet....
To get a really fast connection, if at all possible it could cost you $$$'s per month.
