Hi Simon!
I also looking for job in Maldives and now still wait for interview result!
From what I've heard and reads, better you apply first to a resort or company by email (and some interview by skype) once you got the job already you could arrange to move there!
Because the basic spends there will be a lot ( around USD 1.000 / months for a flat in Male) and others, better to get the job first then take the second move ! 
I think you could find some jobs in Maldive through some website , try to apply and email them first!
