Portuguese in Mexico

Hello. Im Daniel from Portugal. I met a person from Jalisco and i want to go there. I've made the reservation for 6 month but que lady in the Mexican Embassy told me that i need a valid passport, declaration from the bank and my income at least 800€ ( 1070US Dollars ) by month. How can that be? I ask her, and if is only by 1 month? She said that when i arrive at mexico i must fill papers and then they might or not let me in depending on the money i have.
I'm going to live with her. We want to marry but like this its absurd. I have 350€ ( 470US Dollars )every month in my account plus money for the trip and for 6months.

Is there any Portugues who lives in Mexico or any city? If i had a job by a company would be great. I speak Portuguese, Spanish, Fluent English, French and understand a little bit of German.
