Help planning a month long trip to China

Any ideas of not to miss places (preferably not too touristy), possibly starting in Shanghai and moving south towards Haikou. Love food, street food, culinary history, etc.
Any help would be appreciated.

In Shanghai: Definitely check out the Shanghai Acrobat Troupe, Yu Gardens & Bazaar, The Bund, various Dumpling shops (amazing food), any of the numerous fake malls and fabric markets.  Shanghai's a WONDERFUL city and I know you'll love it here.  For more information on the above activities or to learn about more things to do in Shanghai, check out our blog at shanghaishangrila.blogspot.com.
