Maybe a bit off topic but I would say that the most difficult thing I had to learn about local cooking is the cuts of beef.  When I first came to Panama many years ago I live out in the interior so I had to cook with what was available. At times I had to cook what was being harvested, hunted, collected, or butchered at that time.   Most convenience foods were not available so I got out an old cookbook to cook everything from scratch.  I learned to cook local from my neighbors.  One thing I loved learning was each person's special recipe for arroz con pollo.  Another food that is done differently from province to province is Panamanian tamales.
