European Citizenship

As mentioned elsewhere on the site, I am looking to move from the US for various reasons.  1 of the main ones is I want my daughter to grow up a well cultured individual.  Because of my girlfriend our 1st choice is the Caribbean... if it were all up to me though I would choose European locations.

My questions in this thread...

If you have a parent or grandparent that is an Irish citizen then that qualifies you right?  Are there any other stipulations (education, income, criminal)?... as other members of my family are interested too.

What if your great grandparent is from Ireland?  Does that give automatic citizenship to their children born in the states (ie my grandmothers mother was born in Ireland) therefore giving me a right to Irish citizenship?  If not, can my father claim citizenship from his grandparents... allowing me to then claim citizenship from him?  I am assuming yes as the way I understand it to claim citizenship from a family member they only have to be a citizen of Ireland.. not only citizens that were born there.

My Irish lineage can also trace history to Spain (O'Sullivan)... although I am sure it is beyond my great grandparents... do I have any avenues to explore there?

What about for a grandfather who had parents from Germany?  I know nothing of German Immigration.

On the other side of my family we can trace roots to Scotland, France, Sweden, & Spain... but I don't know how far up the tree I have to go to find a relative born in any of those countries.

If I (we) do have claim to a European citizenship & we claim it... that will allow us to live & work (open businesses?) anywhere in the EU, correct?

Thank you in advance for your help.

There are some infos there... but I don't know if you can become Irish if you have not been living in Ireland for several years.
