According to Wikipedia, most languages in China belong to the Sino-Tibetan language family, spoken by 29 ethnicities. There are also several major linguistic groups within the Chinese language itself. The most spoken variety is Mandarin spoken by over 70% of the population.

China is a great place to learn Mandarin Chinese, even though English is spoken in bigger cities, speaking some Chinese will definitively help you.
