I have a US driver’s license from a state that qualifies for the French license exchange program. I submitted my documents online and received a message that processing time is 6 to 8 months. Is this accurate? Can expect (hope for) a shorter time?

Mine took a Year, but you can get a good AAA International Driving License for a year to hold you over. If you do the application carefully, it will help—a translation of your license, both sides by a French State-approved translator. Which you find on the internet, emailed to you by the next day. If your state license has a short life or a recent start date, explain. Add a note about when you got your first driving license. Your age and the year. And list all the States where you have had a driving license from. They are concerned about the experience. The minimum time is 90 days before they look at it.
