Recommended places to stay for independent travellers in Brazil?

Does anyone know any wonderful pousadas to stay at in Bahia or the South of Brazil (Paraná, Rio Grande do Sul, São Paulo)? Places that you would really really recommend, either for location or service/style or just because you really like the owners? I´ll be doing two trips later on this year looking for new places to add to the on-line guide hiddenpousadasbrazil.com. Any suggestions much appreciated.
