First timers to Europe... Looking for a local's advice

Hi, I’m from Summit County, Colorado, USA but currently studying/living in Iceland.  My hubby and I will be visiting Europe in May for 2 weeks.  It will be our first time, so we’re stoked to explore our ancestor’s homelands!  We already have two days/nights we’ll stay in London.  We want to spend the majority of the time exploring the great outdoors, backpacking, and sightseeing (ie. Castles and geologic features).  What are the top wine & dine restaurants or brewpubs in England?   A whiskey tour could be fun too!  Also, is it worth renting a car or just traveling by train?  With all my preferences stated, could any locals offer some advice on the ‘Best Of’ in England so we can ensure an epic experience during our short visit?

I'm here in London for more than 2 years, I would suggest you not to go for renting a car in side London as you may end up spending most of your time enjoying London traffic, but you can do more in tube, bus may be your last preference. And you can find bars in every corner so that won't be an issue. but I dono much about pubs. taking london bus city tour may be idle to explore center of London.

IN london the best is to take the Big bus tour bigbustours.com/eng/international/default.aspx
It will stop at all the mains attractions and avoid you a lot of walking. You can hop in and off any time you want. It's a great system, I ve done it with my friends..
In wiltshire, you have Stonehenge (although you have to pay if you want to get closer from the rock), woodhenge and a lot of mistical things..
For whiskey you should go to Scotland but then it's really far from London
