We want to marry in Germany and live there afterward but I have questions regarding things like income tax.  I am about to retire and was wondering since when we marry I will not be a German citizen can I still pay my taxes to Canada since German taxes are so much higher.
Also if there are any Canadian expates out there if they can tell me their experiences (health insurance, moving, shipping pets) - what ever you can tell me on every aspect of your experience would be great!

Tax rules, not your preference, determines where you pay tax. There is no choice in the matter!
Those rules are complicated and only a tax consultant (or in your case, two: one Canadian and one German) can tell you exactly what applies in your case, but usually you pay income tax where you live.

When I moved to Germany, I paid all my Taxes in South Africa, only once I started working in Germany did I have to pay tax.... and yes they are high!

I also didn't bring my animals over, but I can recommend a company that might be able to help you or at lease push you in the right direction.
