Is there income taxed in Jordan? If so, what is it? What other taxes should I expect?

Income taxes in Jordan are very low. Social security payments paid on your salary can be withdrawn when you leave the country. Sales tax and customs duty on imported goods are high and so you will find items in Jordan cost as much, and in many cases more, than they do in the USA.
