Baba Ghanoush

http://ts2.mm.bing.net/th?id=I.4874084258416273&pid=15.1

Original recipe makes 1 1/2 cups Change Servings

Ingredients

    1 eggplant

    1/4 cup lemon juice

    1/4 cup tahini

    2 tablespoons sesame seeds

    2 cloves garlic, minced

    salt and pepper to taste

    1 1/2 tablespoons olive oil

Directions

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
Place eggplant on baking sheet, and make holes in the skin with a fork. Roast it for 30 to 40 minutes, turning occasionally, or until soft. Remove from oven, and place into a large bowl of cold water. Remove from water, and peel skin off.
Place eggplant, lemon juice, tahini, sesame seeds, and garlic in an electric blender, and puree. Season with salt and pepper to taste. Transfer eggplant mixture to a medium size mixing bowl, and slowly mix in olive oil. Refrigerate for 3 hours before serving.

I love this dish too. It goes well with Kubbus.
We call it Hommoos or Salad here. Never heard the real name before.
I was told that it is Lebanese food, but it's a Levantine dish.

Best part is this is 100% vegetarian.

You are right, this is a Pakistani / Afghani / Indian food. But I've never eaten it like this anywhere in India.

Actually, I had that for dinner last night.

@Dave  Baba ganoush and hummus aren't the same thing.  Order them both at the same time and you're sure to see the difference!  The Turkish place on Talenteen Street has the best baba ganoush in the WORLD!

Babaganoush and hummus are definitely not the same.  Hummus has chickpeas (garbanzo beans) are the primary ingredient.
