Driving to Oman

I think you just need to make sure that your insurance is covering UAE & Oman.

I drove to Dubai from Muscat two weeks ago and was not asked to provide any papers or documents related to the car. However before travelling I contacted the Car Rental company since my car is rented one and they gave me a kind of NOC to drive the car to Dubai together with the insurance certificate (But I didn't use these documents at all in fact)

I own my car and it is not mortgaged so I do not think I need any NOCs.

My insurance covers only the hinterlands of Oman, not the mainland. Where can I buy supplementary insurance for Oman?

The insurance you can easily buy it at the border.
