It took me 20 days from handing in my forms to picking up my work permit.  I did it all in Mauritius though.

Yours is an Occupational Permit delivered by the BOI ( it is supposed to be delivered in 3 days but….) , whereby you have to be on the island to apply for it.
What he is asking is the Work Permit delivered by the Ministry of Work , which his employer should apply on his behalf

Yes, my employer submitted my documents 1 week ago so I was just wondering how long the wait should be now?

Anyone's guess - seems that they are delays even for the Occupation Permit .

Work Permit from the Ministry takes longer even during normal time : 4 to 5 weeks
