After many years of volunteering in and around Uganda, for me, my favorite is Cow Peas and Rice. Most people rave about the tilapia....and I can agree that the fried fish is very good....but after spending time in Kisumu, Kenya on the other side of the lake, I personally, find the fish better there. The fish is the same, but the preparation is better in Kenya.....mainly because they have various choices of preparation...not just plain fried fish.
