I think it really depends on where you want to rent! €500 does seem rather low though. I didn't come across any 2 bed penthouse within that budget, at least not in the areas I mentioned in my post. Do you know where you'll be working or where you want to live?

Not yet, as I have to stay here for December and a bit in January, I'll try to look for job from next year. January that is. I'll give it about 2 months to find something remotely, and if I don't find anything I move there and try locally from there. I'd really like continue working in software development there, in fact if I don't find a job in that field, I will need to leave. And that would be really sad!
I guess the job will be around Sliema/St. Julians as you previously mentioned, but to be honest I wouldn't mind if it's at a quieter area. I'll likely not want to live there, because - just as you - I appreciate quiet areas and neighbors. I was thinking of Bugibba and maybe take a car there daily.
