Spouse has Maltese passport. Can we both live in Italy?

Hi there,
My husband and I who currently live in Melbourne would love to live in Italy for a year. I hold an Australian passport but I have Italian heritage so I can apply for Italian citizenship and an Italian passport but I am unable to get an appointment at the Italian embassy in Melbourne to apply for citizenship until May 2018! Considering how long the whole process may take, do I really need the passport to stay?
My husband holds a Maltese passport which I assume allows him to live in Europe. Do I need some kind of visa to stay in Italy as his wife?
We probably would not need to work in Italy as we will run a small business via the internet and do some teaching. Would we need to prove that we can look after ourselves financially?

I am an Italian citizen living with my non-EU partner in UK (as long as UK dont "brexit") and she applied for an "EEA family member visa" every country have the obligation to offer this visa to non Europeans family members of a EU citizen

this is probably the easiest way to stay in Italy, with all the same rights than a EU citizen, work healthcare, etc
