I  like cooking in Palestine because the rewards are delicious, healthy food. There is something about the soil in Palestine that makes vegetables taste scrumptious. Salads are prominent on the daily menu. The basic lemon juice and olive oil dressing makes any salad wonderful. We use seseme  seed  paste in salads. The one with roasted eggplant and garlic is my favorite.  Palestinians use vegetables, garlic, onions, olive oil, eggs, yougurt,  lintels, rice, and meat  sparingly unless it is a barbeque. 
Arabs invented barbeque and bread and along with  the mouthwatering vegetables and olive oil Palestine  is a cook's  delight.
