My family and I are going to north Sudan in Agust to do some medical work and because I’m a female I have to cover my hair and body, but is okay/normal that I don’t feel comfortable covering my hair?

you are not forced to do that ,if you want to cover your hair its ok and if not its ok too,but if you decide to nt cover your hair just ware prude clothes or Long and wide clothes

as nony13 suggested its better to wear non showy clothes, people who live in villages are Muslims & in Islam ladies dont show their bodies in public & they will probably dont like someone showing like that. Villages community is still conservative not like cities.

as for head scarf you can try to not wear and see what will happen, if you feel uncomfortable you should have one just in case.

In any case Sudanese are very kind by nature & they will be very hospitable especially in rural areas. Just be ready to eat a lot of meat :)
