Has anyone here moved to Morocco and opened up a cafe' or small restaurant?  My goal is to move to a coastal town, like Essaouira, and open up a small establishment. maybe something like a small street side cafe' with an apartment above.  What are the challenges of an American citizen accomplishing this?

You are coming too late.
Essaouira is no longer booming, and the entire economy is slowing considerably.
I have residences in Tangier, Asilah and Esssouira. From what I’ve gathered, Essaouira has the slowest economy due to its nature catetung to lower-middle class tourists (foreign or local), basically hippies. They come, but they spend very little.  Tangier used to be like that until 3 years ago, getting only impoverished Spanish tourists who trashed the entire town and spent only a refrigerator magnet or two, but not anyone. It is now very booming due to the Free Zone and the Port. And believe it or not, clean. If you want a quiet coastal town but filled with people with spending power, try Asilah.
Sorry to rain on your parade!
