Hello there. I would like to embark in a new career field as an Elevator technician, repairer, mechanic.  Would there be any prerequisites I must need in order to study this trade? What are the first steps/ processes in starting up an ausildung? All advice is greatly appreciated.

There is no apprenticeship for that specific type of job, so you'd have to learn a more general trade and specialize later.
All available types of apprenticeship are listed on https://www.ausbildung.de/berufe/glossar/

Found this at Google. The site shows information about this career including the following information, which I have roughly translated but also included the original German as some of the terminology is outside of my field of competence:

Prerequisite is a professional training as a precision mechanic - or plant mechanical systems and component engineer - or 5 years working experience in the machine or metal industry.

4 – 6 further training after the fundamental training for the machine or metal industry.
