Thousand is okay to live in Lisbon. You can't get an apartment in the center you have to get an apartment a little bit outside. But you can definitely live on one thousand euro  and have money to go out.

Yes that sounds about right.  Food shopping isn't that expensive. Coffe is 60 cent euro. The metro for a month pass unlimited is 35 euro. An average lunch is 8 euros with drink.

You should find a home on the out skirts of a city for 300 euros.the trick is to get bus route Alex

yeap, plus with portugueses TAXES available income will be reduced.
Employer might take care of your lodging need, and make that an expense for tax purpose.
