Quick Holiday visa question

You have to have 'not turned 31' in order to apply and be granted a holiday visa for Oz.

Presumably, I can apply when I am 30 and go to Oz days before my 31st birthday and then work there for a year even though I'll be NEARLY 32 by the time it expires??

Is this correct??

Yep that is half correct - you must make the application before your 31st birthday, but you then have a year to enter. As long as you have made an application before your 31st birthday you are fine and you do not have to rush to enter by your 31st birthday.

Unfortunately you will not be able to apply for the second working holiday visa, because you will then be over the age limit.
