anyone can guide on the timeline for processing the Mofa UAE attestation and issuance of the employment visa in Dubai?

Critical time is taken for issuance of Emirates ID.  Other formalities can be done quickly by your employer.  EID may take 2 weeks or more.

can i make the attestation direct to mofa for my original college diploma since i didn't do the attestation in the UAE embassy in my home country?

No, MOFA generally will not entertain the request without UAE Embassy in home country doing the attestation first - they only verify the stamp of the UAE Embassy in home country.
