HELP! Cooking and eating local fish

Post new topic

pajaroflor

Ok you experts who enjoy eating fish and have been here for a stretch of time... Just help me narrow down ( there's a pattern to my inquiries because I like keeping this simple, including decision making). Tonight. I enjoyed Nagil ( Coral grouper) grilled. It was a firm white meat with  a mildly sweet flavor and nicely done. The skin however was slightly charred and rather tough to cut through but protected the firm meat perfectly. I know how to buy fish and cooking it is also a joy. So, how to cook or order the following fish? If you can give the English name it would help a lot so I can cross reference other recipes once I narrow it down.. Or perhaps not... Maybe it's all wonderful and I will buy and cook according to market availability. Incidentally, going to the early morning fish market is AWESOME! Thanks in advance if you're patient enough to just copy my list and comment... It is VERY much appreciated. My kitchen pantry spices is starting look like a apocathary!
