So which category do people like myself fit in?

I am NOT on VISA, nor I'm am I from the U.K, or the U.S.

I am trying to locate information for those people who are:

European citizens but are NEW to europe.

Where or to whom does an Australian or New Zealander go to when wanting to apply for Health Care Insurance provided by the EU?

The information I've found so far is provided for U.K residents only.

If you have information on both applying for Health Insurance provided by the EU to EU citizens, and having Social Security, in France, and for those who travel from country to country in Europe.

Thank you.
Gabs.

There isn't any insurance provided by the EU. Health insurance is the business of each individual state, usually based on tax contributions in that country. You need to ask the authorities wherever it is you live.

eg France: http://www.ameli.fr/index.php and http://www.service-public.fr/
