Moving to Central/South America

Hello me, my partner and my 4 year old daughter are considering a move in about 18 months and were trying to decide on the final destination so we can visit in a few months time.  Were thinking either Ecador, Costa Rica, Nicaragua or Grand Cayman.
My partner speaks Spanish so he would prefer one of the Spanish speaking countries whereas id rather Grand Cayman.
Were both in our late 20's, i work in admin currently and would rather stay working in this area although im considering taking a TEFL course as a backup, my partner is currently training to be a mechanic.

Any advise on what there countries are like to live in, what work is like, nice areas, if expats can start up business, cost of living, good schools (English speaking) immigration laws etc etc would be much appreciated.

If you want to be near a city but not really in one, cumbaya, outside of Quito is a good place to start.. There are also school there that you might find work in.  Let me know if this helps and what else you are looking for information about!  Jon

We'd quite like to be close to the sea as were quite 'outdoorsy' people.  I currently work in an office and would like to stay doing office work either for an English speaking company or School as i may not be fluent in Spanish by the time i come out.  Do you know if there's much call for office work????
Teaching English is kind of my last resort as im not quite sure if my grammer is up to scratch and i have no teaching experience what so ever.
Do you have any advise on immagration laws as me and my partner are not married and my daughter has a different surname from us both does this effect things?
