What vegetables make good soup broth

Hi, I am a US expat married to a Vietnamese man. While I can use most online vietnamese recipes, I find most of them aren't exactly the kind of "home-cooking" I see my husband and his family making. Particularly the soups. Most of the soups they eat are simply the leftover water from steamed vegetables, possibly with a dash of lemon. While I understand how to do this, I was wondering what are some good vegetables to do this with. I have no problem with complicated recipes (bo kho, pho, canh chua, etc), but the one vegetable broth is hard to wrap my western head around. When I go to the market, I usually end up grabbing rau muong (water spinach) because its the only one I know for sure. But I am pretty sure I've seen my sister-in-laws use other vegetables...I just don't know which ones.

Hi,

I am not sure if my cooking is style of vietnamese cooking. I usually read Vietnamese recipies but most of them hide many information or bc of different area cooking style. I just read to know what to cook and do by my own style. Can you show me a pic of your husband famuly's soup? I will tell you how to do.

Sorry, I don't have a picture right now....maybe after dinner tonight.

Its a green clear soup with nothing in it (the steamed vegetables are removed and served on the side). I know if you boil rau muong and then take out the rau muong, you have one version of this soup.

But his family makes similar broth out of other vegetables. I can't visually tell greens apart in the market, and they will just tell me "rau" when I ask. My husband loves this type of soup (more because its cheap than the taste), and I would like to vary it a little as he likes to have it with almost ever meal. He's fine with me using rau muong so often...but I would like a little variety.

Here is the closest picture I can find. We ended up having leftover beef broth with bun from lunch for dinner.

His family is orginally from central vietnam but moved to lower central (Dak Nong) while he was still a baby. They are a farming family.

Today's busy housewife often has two jobs - at the office and at home.

Over the past couple of years 'pre-mix'. The first were simply dried mixed powders but now there are far superior ones. My wife uses S-COOK.

S-COOK is manufactured right here in VietNam and contains only natural ingredients. There are numerous flavours.

For example the BO KHO mix can be used with beef, pork or chicken.

The CA RI mix can be used for chicken and pork.

There are other mixes, both spicy and 'normal', many for fish or mixed seafood dishes.

I know they are sold at GIANTS (Crescent Mall, Q7). My wife (VNese) likes certain flavoured mixes so much, she buys them

BE AWARE that Knorr and Nestle ar banging out similar products but they have HIGH CHEMICA:/PRESERVATIVE content.

But for good news, I found another woman with a vietnamese husband in an American forum, and she knew what I was talking about.
