Hoihoi!
I'm volunteering next year, and gonna start up my stay with attending a spanish school for about 4 weeks. Does anyone have experience with Yanapuma Spanish School or Simon Bolivar Spanish school?

Based on online reviews, Yanapuma seems to be the real deal.

In particular, you may want to google the extensive 2013 review on Lonely Planet from a couple who did intensive language study and travel with Yanapuma.
