Have any of you ever frequented any of the co-working spaces here in HCMC? I'm looking for one of the more laid-back ones. Can you recommend any like that?

Cafes are laid back and not $10 a day. But these listing sites have coupons for one free visit, you could spend a couple weeks doing that for fun.
