Smoking Meats With Tropical Hardwoods

So, tired of the Same Ol' Topics?

Well here's the cure!  I've moved down here from Louisiana where we have a sort of perpetual contest with Kansas, Texas, Mississippi and other places to make the most tender, juicy meats imaginable from the roughest crap-for-meat you can imagine... a necessary skill that goes back to the early 1800's.

Anyhow, I could take my work boots and cook them 'my way' and if you looked at them cross-eyed they'd melt in your mouth and taste great.  Been doing it for 30+ years.

But, not a lot of Hickory, Oak, etc. around here.  Have read that Mesquite is available commonly on the south shore and that Ironwood and Mahogany are good for smoking.. haven't done those yet.

Building a smoker at present out of a re-purposed refrig, experimental to be sure, laugh if you like, will see how it goes.

Point of the post was to ask for recommendations for suitable woods.

I had just cooked up a batch of whole mushrooms in wine/Worchestershire/butter/pepper, etc, sauce and something was off.... it was the alleged Cabernet....

It was the wine... so definitely need a sommelier
