You asked lots of questions. i would suggest you to visit Masala TV website and some other food related TV channels websites. You can get all your answers from there.

She asked the questions so people can share their experiences and get infotmation from different source rather then fine looking tv chefs who get everything provided to them just for the sake of showing the cooking. Remember not everyone even most people will have kitchen and workspace like tv sets.
