Partner from Venezuela will he get entry to Spain to holiday with me

My partner and I want to go to Spain and then to France so my family can come over and meet him from England, he was refused a tourist visa for the UK. I'm British.
My question is will he get turned away at the airport in Madrid or Paris, i see he has to have 90 euros a day in a bank account, can we have a joint account and that serve as proof. We would have t go open one now and i put the money in it. We plan to go end of September or will they see that as being dodgy a sudden big chunk of money in both our names.
Also what the heck does 'a supporting document from the establishment providing accommodation' look like, we had planned to couch surf and backpack through Spain in hostels, so would all our hostel bookings be sufficient, do we have to print every booking confirmation. And also if i book them all and then he gets turned away i have to cancel them all and loose the money because the date for cancellation is before the arrival date for some of them. 
I'm just wondering if it's not worth the hassle.
Also do you think it would help if we were married, we plan to get married anyway its just a question of whether we do it before the holiday or after.
We both live in Ecuador and have visas and plans here I can bring some proof of that too if it would help.
Looking for any advice.

Hi and welcome to the Forum.

You haven't said when you're travelling, but Brexit (currently scheduled for 31 October 2019) may mean you as a British citizen may need a visa to enter Spain and France.  You are probably choosing what will be a very difficult period for Brits travelling to the EU.

As for the rest of it:

You are probably aware that Venezuala is currently going through some political turmoil, with many nationals seeking asylum in other countries; this fact is going to inevitably cloud the views of whatever country you try and travel to.

Your boyfriend probably (because you haven't said) got refused from the UK as they thought there was a genuine reason to think he may not leave at the end of his visa and may try and claim asylum in the UK; whatever the reason, the Spanish/French may take a similar view (you should be aware that these agencies talk to each other), so you need to gather evidence that you intend to return to Venezuela, so things like a return flight ticket, letter from your boyfriends boss that he is holding his job for him, or a letter from your boyfriends school/uni that he has a place on a course in the future.

Couch surfing and daily hostels will cause you a problem when trying to prove your holiday trip is bonafide; they are looking for hotel booking confirmations and return flights at the end of the stay.

Your post says that you plan your trip for the end of September (at which time the UK will still be a member of the EU). You also said that you have decided to get married in the near future. So: if you enter into a legally valid marriage before your trip then things become significantly easier for you...

Under the EU Directive on Freedom of Movement, you (for the moment) have the right to live and work in any EU country, together with your spouse. That means that so long as you two can produce a valid marriage certificate, along with your passport (evidence that you are citizen of an EU country) the embassy of any other EU country is not allowed to refuse him a visa, nor allowed to charge any kind of processing fee. Applying under this procedure there is no need to supply financial information, nor to provide evidence of hotel/hostel bookings... However, I do wonder whether it is possible to complete all the legal requirements for marriage as foreigners in Ecuador within the limited time available.

To answer some of your other questions: if you seek to travel before marriage, then he would need to provide evidence that he has enough money for his trip. If the money suddenly comes into his bank account that will of course arouse suspicion and could lead to the visa application being declined. Far better for you to provide a letter stating that you will be paying (as is the case) and saying why; and including evidence of your own financial situation. The other requirement is evidence of accommodation for every day of the proposed trip (the visa will usually be issued only for days for which accommodation has been booked). Hostel bookings would work as well as hotel bookings: Couchsurfing would be very difficult. Simplest would be to use a service such as Booking.com that allows you to make any kind of refundable booking.
