Well you're in the right place.  Pampanga is the home of Sisig. And yes, like the women there, the spicier the better  :D

I do not like over cooked or spicy food (my wife puts chilli in after mine is served), I am trying to avoid deep fried for health reasons but my wife makes a wonderful lumpia tolgi. My other favorites are sizzling gumbas (with mashed potato side), lechon, tempura praws and my daughter's home made sinagang.

The health concern for Pinoy foods, is that the majority of it is over-cooked in oil/deep-fried.


once in a while is great, you can't deny the tastiness of the foods, but like all things,  it is more appreciated when there is moderation. try to eat greens, water based vegetables with every meal if you can. And as always, limit your rice in take. White rice in particular, has the highest concentration of starch and sugars. go for red or brown rice instead. more expensive, but far healthier for you!

I wonder if maybe the meats were over-cooked since food storage is not the best. The wet markets, if you've seen it, had meats hanging on hooks were flies feast on them. I also noticed there isn't (if not very few) veg dishes were mentioned earlier. Like your mommy used to say: eat your veggies. I cannot recall right now if veggies were over-cooked as well.

Meats being offered at open-air shops and such are not to be trusted in terms of safe handling. they have often been hanging out in the open all day in the sun, with god knows how many flies and swarms of other insects circling around all day. These foods are of no safe consumption for most foreigners - particularly North Americans. I only have purchased poultry, beef, other meats from reputable grocers - as i've had too many lessons in just how poorly filipino markets handle such raw foods  (fell ill to what was salmonella at least once) !
