Now that Bob K has revealed that he does all the cooking in his house, I´m wondering if he will share some expat recipies.  I like Dominican cuisine. Just not everday. I have no issues with my wife´s cooking.  She makes good sancocho with chivo, carne de res or pollo. I´m not a fan of vinegary habichuelas con arroz. I like prime meats with wine-based sauces, but it just doesn´t have the same taste as my kitchen in Florida.  Maybe because our only food market in San Cristobal is a small, orphaned Sirena. No fresh mushrooms, no scallions or even green onions. Nothing prime. Ground beef is tasteless, even in  tacos. Maybe I´m not creative enough with Dominican-grown products.

Interesting idea for a thread!  Thanks for starting it.  I won't have much to say about cooking as I hate to cook......lol

Boy what to say. Most Dominicans know only three spices:
sugar (and more sugar)
Salt (and more salt)
Sazon which is like a seasoned SALT
Chicken bullion cube which has more salt.

So you have to get out of the Dominican "box" to cook.
We grow our own Rosemary, thyme, cilantro, basal, lemon grass, dill weed and use this stuff a lot.

Meats (especially local meats) need to be slow cooked if you don't want to spend hours chewing. That is why Sancocho is so good as well as the local Goat stew (with some spice help)

Took a break from Dominican cuisine and made shrimp-stuffed avocados topped with fresh homemade mayonnaise. Accompanied by a glass of Ramon Roqueta chardonnay. Well, three glasses actually.
The mayonnaise is so easy to make, 10 minutes of whisking egg yolks, corn oil, dry mustard. sugar, lemon and salt. Better, and more economical, than the retail kind. Google has dozens of recipies.
  Those in my Dominican household liked the mayo, but passed on the shrimp because the pre-cooked shrimp wasn´t cooked again. The practice here is that if it´s worth cooking, it´s better over-cooked. Don´t get me started on con-con.

I is the burnt rice on the sides of the  pot that they cook, or should I say overcook, their rice in. It is rather tasty but very crunchy

I also am interested in looking into Dominican cooking.  I ve been cooking chicken and steak on the grill since I was a kid with my dad.  I like making collard greens, sweet potato mashed, shrimp and grits.  I was thinking of looking up a San cocho recipe

dominicancooking.com has a lot of great Dominican recipes, and usually have some fun info about the dishes as well. They even have (or at least used to) a for where you can ask about the recipes if you have any problems cooking them!
